Eggs-actly what’s so great about an egg?  

 

Inexpensive and loaded with nutritional benefits, eggs are a cheap source of protein and contain key vitamins and minerals.  Free of trans fats and low in saturated fats, eggs are also a good source of choline (linked with preserving memory).

 

At only about 68 calories, hard-boiled eggs are fun to eat and easy to pack for on-the-go lunches.  Mix chopped up hard-boiled eggs with fresh lemon juice and olive oil, leeks and dill to make a healthy egg salad.

 

If you need to be cautious about cholesterol consumption, try using one whole egg and two whites in your omelet or scrambled eggs with very little difference in taste.  The whites contain over half of the protein and no cholesterol.  You can also use egg whites when a recipe calls for “egg substitute” since the substitute is simply egg whites with stabilizers and coloring.
